Here's a trick which removes the need to fiddle about peeling quail's eggs. Prepare to peel your beetroots: wearing rubber gloves is a good idea if you don't want to stain your hands. Cut off the tops and the skin should come away easily.
To serve, arrange rounds of beetroot on a plate with some strips of cornichon, quails eggs and capers on top, and drizzle with lemon dressing.
