It's cold off the press and it is a taste sensation. Seresin Wines' new-season olive oil is the first oil of the season, cold-pressed and bottled unfiltered. While most extra-virgin olive oil is left to settle for 30 to 90 days before bottling, Olio Nuovo goes from tree to press to bottle in a matter of hours, and captures a flavour that cannot be found at any other time of the year. The oil is pungent, peppery and a luminous green.
It is not an oil for high-heat cooking. Heat gently to sweat soup vegetables, or use as a dressing for a last-minute hit of flavour.

Marcia Chang-Hong's lentil soup
1 1/2 cups small brown lentils
6 Tbsp Olio Nuovo
1 onion finely chopped
1 carrot finely chopped
1 celery stalk finely chopped
1 leek finely chopped
75g pancetta or bacon, diced
2 cloves garlic minced
1 sprig rosemary
Small bunch of sage
2 bay leaves
6 cups vegetable or chicken stock
Salt and pepper
Soak lentils for 30min, then drain. Gently warm half of the Olio Nuovo with the vegetables and pancetta. Stir over a soft heat for 5 minutes until the vegetables are soft but not coloured. Add the garlic and saute a few more minutes. Add the lentils. Tie the herbs together and add. Cook 5 minutes, stirring gently.
Add the stock, bring to a boil, turn the heat down and simmer for 45 minutes until the lentils are soft.
Now remove 1/2 cup of the lentils and reserve.
Discard the herbs and puree the soup in a food processor. Return to the heat and stir in the reserved whole lentils.
If the soup is too thick, add some stock or water.
Season with salt and pepper. Serve in bowls with lots of fresh Olio Nuovo and chopped parsley.
